Roast Carrots
12 carrots
3 tablespoons olive oil
salt and fresh ground black pepper
2 tablespoons minced parsley
Preheat oven to 400 degrees.
Slice carrots in half lengthwise
Toss them in a bowl with oil, salt, and pepper.
Transfer to a sheet pan and roast in the oven for about 20 minutes,
until brown and tender.
Toss the carrots with minced parsley. Serve- watch the leaves fall.
